Keeping Green

(Source: Women's Health & Fitness, Australia, January 2009 edition)

Boost your eye health with a daily serve of greens. Studies show women who eat green vegetables high in lutein and zeaxanthin, lower their risk of developing macular degeneration, causing vision loss due to retina damage in the eye. The top three greens to pile on your plate are:

  • Spinach - Try a spinach, pine nut and goats cheese salad.

  • Broccoli - Stir-fry with ginger, chilli and light soy sauce.

  • Asparagus - Blanch lightly and drizzle with lemon juice and extra virgin olive oil.
