I found this interesting recipe from Weight Watchers Magazine, September 2008 edition and would definitely be trying it out :> seems quite healthy although quite weird combination of apple and egg hehe....
Recipe:
1) Whisk 1/4 c. grated apple and 4 egg whites
2) Spray a skillet with nonstick spray
3) Add the egg mixture and cook over medium heat until set
4) Serve with crispbreads
